Avgolemono Soup

Ingredients:

 

  • 1 whole organic chicken

  • 1 lb. orzo -3 cups

  • ½ cup of lemon  juice.  Add more or less for taste

  • 3 large eggs

  • salt  & pepper

  • 1 tbs. flour

 

Cover chicken with water and boil.  While boiling,  DE-FOAM.

Boil till fully cooked . aprox. 45 min. to a hour.

Removed fully cooked chicken too cool.

Add orzo to boiling water. Boil till tender.

In a food processor beat eggs with flour then add juice from lemons.  When fully processed add   4 cups of stock slowly to prevent egg from curdling.  Then slowly add mixture to boiling  stock. Tear chicken into bite-size pieces and mix into soup.
